This super simple dressing is one of my all-time favourites! I put it on everything from salads to buddha bowls to falafel burgers to….well, pretty much anything! It’s also great as a veggie dip if you leave out the water for a thicker version. Plus, since it’s nut free (tahini is made from sesame seeds) it can go into any peanut free zone, making it great for school lunches! And the best part is there are only 4 ingredients between you and this tastiness.
Lemon Tahini Dressing
- 1/4 cup tahini
- Juice from one lemon
- 1 clove garlic
- salt and pepper
- 2 Tbsp. fresh parsley or cilantro (optional but highly recommended!)
Simply combine all ingredients in your blender (I love my magic bullet for sauces and dressings), then add water as needed to thin to desired consistency. Voila! Keep it in the fridge for up to a week.
