Who the heck doesn’t like brownies – and better still – brownies that can essentially double as a health bar? These brownies have the fudgiest, chewiest texture (especially when stored in the fridge), are gluten-free and grain-free, and can be whipped up using only one bowl (which means less time cleaning and more time eating). Plus, thanks to the Prairie Fava flour, they’re loaded with protein! Now you have THE perfect excuse to eat brownies (not that we ever really needed one).
The Natural Blonde
Chewy Vegan Fava Brownies
- 1/2 cup non-dairy milk
- 3 Tbsp. flaxseed meal
- 1 tsp. vanilla extract
- 3/4 cup coconut sugar
- 1/2 cup coconut oil, melted
- 2/3 cup unsweetened cocoa powder sift if lumpy
- 2/3 cup fava flour
- 1 tsp. baking powder
- 1/4 tsp. fine sea salt
- 1 tsp. flaked or rock sea salt for sprinkling on top
Preheat oven to 325F. Line an 8-inch square baking pan with parchment paper
In a medium bowl. stir together the milk, flaxseed meal, and vanilla; let stand for 5 minutes to thicken.
Once thickened, whisk in the sugar and oil until blended, then whisk in the cocoa powder, fava flour, baking powder and fine salt until blended and smooth. Scrape batter into prepared pan, smoothing the top. If using, sprinkle the flaked/rock salt over the top.
Bake for 30 to 35 minutes until center is just set (no longer appears gooey) and the edges are pulling away from the pan. Transfer to a wire rack and cool completely in pan. Use parchment/foil overhang to remove brownies. Use a sharp knife, dipped I hot water, to cut into 16 squares.
