I love stuffing as much as the next person. I may even argue it’s the best part of any turkey dinner (although it’s a tough call between it and the mashed potatoes). But the nutritionist side of me is weary of any dish based on nutrient-lacking white bread (I know – she can be a real downer at the dinner table!). Luckily I’ve come up with an alternative to traditional stuffing that not only tastes amazing but also muzzles the nay saying nutritionist inside so I can enjoy my damn Christmas dinner! 😉
It features brown rice, which unlike white bread is full of fiber and lots of important vitamins and minerals like your Bs, manganese and selenium. It’s also vegan and gluten-free – much to the pleasure of my celiac uncle who also loves traditional stuffing (but not so much the less appetizing side effects….). And the best part is it keeps as leftovers way better than the original…and I make sure there are always some of those.

Apple Brown Rice Stuffing
• 1½ cups brown rice, uncooked
• 2 cups natural apple juice plus 1½ cups water
• 2 tsp. grapeseed, avocado or coconut oil (for cooking)
• 1 crisp harvest apple, cored and diced
• ½ cup diced yellow onion
• ½ cup finely chopped Brussels sprouts
• 4 cloves garlic, minced
• 1 carrot, peeled and finely chopped
• 1 cup diced celery
• 1/3 cup oat bran
• ½ cup naturally sweetened dried cranberries
• 1/3 cup slivered raw almonds
• ½ tsp. poultry seasoning
• ¼ tsp. thyme
• Freshly ground black pepper, to taste
Make rice according to package instructions. Use the combination of natural apple juice and water for the cooking liquid.
Place oil in a large skillet and heat over medium. Cook all chopped fruits and vegetables until they are crisp, not soggy. Add cooked brown rice, bran, cranberries, almonds, poultry seasoning, pepper and thyme. Toss well. Serve and enjoy!!
